I’ve been disappointed in my chase sapphire, we spend anywhere from 5-12k on it a month and the points don’t translate to nearly enough.
Why are you putting general spend on it? Travel cards are for travel spend (and in the CSR’s case, dining spend), put general spend on general/category cash back cards.
I have Amex plat and Amex gold for flights and restaurants and everything else (including foreign merchants) goes on my BofA cash back cards (with plat honors bonus). I find this to be an efficient and worthwhile setup.

I try and apply for 1 cc a month for my family member and I. Chase Inks and Amex Gold and platinum. Chasing those sign up bonuses. I also charge things to the best card for that type of charge.

Sign up bonuses are always so tempting. My partner has the amex platinum but that's more for perks rather than points. I was planning to use amex gold for dining and groceries and chase for everything else.
We have a preferred and an Amex platinum. It’s a good system because the preferred is much better for United points but the Amex is better for delta points, and we often fly delta when we go abroad. Haven’t paid for a flight in years.
So does the chase, but the fees are way less than the value of the flights we book. So even if you subtract the fees from the value of your points, you still end up ahead
