Here is something I wish someone told me this 15 years ago.....make no mistake- if they found a candidate they liked better than you, they wouldn't think twice about letting you go. Do what is best for you- no one is looking out for your happiness and job satisfaction but you.

You got the other job? Got a start date, contract signed, and background checks etc pasted? Pull the bandaid off, give them 2 weeks (if they'll even want you there), and move on with your life. Likely will burn the bridge, but in the end you have to do what's best for you. Don't mention where you are going to your current employer. Best of luck!

Simply tell them it’s not a good fit and give notice. They don’t need to know where you are going.
Are you sure you will get the job you wanted? is it a sure thing? Can you get that signed on paper? ... In that case, the professional thing to do is : If you have commited to deliver a project or result to current employer, do that as part of your terms for leaving, also maybe ad that you will stay on until they find a suitable replacement.
No point in waisting eachothers time if your heart isn't in it.
And that would be the conversation starter.
so to recap:
1. Make sure the Company who missed out on taking you onboard understand and are commited to have you onboard when you leave this current position.
2. Make sure you can end your current position with your head held high and your professional honor intact.
(the what, how and when is on you.)
Its not bad to quit something if its not a good fit, the "bad" is to do it in a way that hurts your current employer.

You will no doubt burn the bridge. Give your notice and do not let the flames hit you on the way across.
If you feel you must give a reason, tell the truth, I suppose.
If you really don't wanna do just don't. Be transparent with your manager it's your life, you are on the track, as a famous quote: JUST DO IT!
The thing is…. My manager and I had a full conversation and working session last week and today about which projects I’ll be prioritizing this quarter for my team. This will be such a dick move on my part to do this
Life happens. Again, as others pointed out, they won't hesitate to get rid of you the second they are unhappy with you or your position.
A boss' primary frustration will be having to find a replacement. It is not fun. They will live.
