I don’t think anything should switch unless you started screen sharing. But 2nd the above suggestion, it’s a great idea to test it with a friend ahead of time
It will only flip to your initials if you turn off your video. If you're working with your video on, they will only see you and not your screen (unless you're screen sharing). You can minimize your zoom meeting and work let's say on an excel sheet and the video will be pop on the top right corner in a tiny screen.

Just turn off your camera
If you're not speaking or being called to speak, I think people would only notice your typing and thinking faces (and only if they're focusing on you among the sea of faces). Unless, of course, you're completely stoic while working--if so, carry on....

People are going to notice you typing and looking at other things/thinking. Turn your camera off and mute yourself.
OR. Have the zoom meeting on half your screen, and your work on the other half. And get a silent keyboard. (I may or may not do this on long calls where I'm expected to be on video, but really don't have much to say.)
