Counterpoint: this person may want you to stay focused on your project work instead of getting distracted with many other priorities. I have seen a lot of new people overcommit and burn out rather quickly. Honestly just savor the WLB this affords you and learn what you can. You have your entire rest of your life to learn stuff – it isn’t a race.
There is no project work. Also I have no meetings as well. I literally have no work which is a departure from the first few weeks on the job
Have a level setting conversation with manager and understand their perspective. Also discuss your aspirations and check if the align with them. Be open to feedback and then adjust accordingly.
Focus on doing well on the tasks you are assigned. New consultants are assigned minor tasks and given time and space to complete them. As you develop in-role, you should get larger tasks and asked to join more meetings.
These aren't minor tasks, these are no tasks. He has steadily decreased the amount of work that I am getting to almost nothing

That's... weird. You may need to address this with his manager, but approach it from a place of trying to understand the situation and their expectations for you.

Did you do well when you were able to participate in meetings/work? Worst case scenario: your manager thinks you did badly and now doesn’t trust you to get involved. You need to discuss with them and reset, otherwise you’ll be managed out.
Yeah I mean there didn't seem to be no issues. It's like he woke up one week and decided to completely block me out. I have been in a state of confusion trying to figure out where it went wrong
To me it sounds like because the team doesn't have much work on, and you are the newest recruit, you are being excluded perhaps as a priority to the existing team. If you are on probation he may be thinking that if he doesn't give you any work then that will give cause to release you upon review.
