Track # of sleep hours each night. It's one of the most overlooked metrics that has substantial effect on your energy and health. Shoot for an average of 6-7 hours & make it a priority to rest when your body needs it
Resting heart rate is an important one, to keep it low requires exercising, keeping stress levels reasonable, eating relatively healthy food, and not drinking excessively
Am i getting fat eating same amount of pizza. If not then metabolism is fine & fine. Any issues in teeth eating ice cream (too cold), no? I'm fine. Does my eggplant emoji stand up when i see porn, yep all good. Nothing more to life.

Yearly blood tests for BP, cholesterol, etc. For personal fitness I use BMI and 5k runtime. I know BMI isn’t that great, but it’s easy enough for me to track.
Digestion is a huge health indicator. Did you know 70% of your immune system is located in your gut? You should be passing bowel movements AT LEAST once a day - but better off with two. They should be medium soft and brown 💩. If hard or runny - could be an indicator of some health issues.
Google and advice above is as good as a doctor's. Ask your doc how many classes he/she had on health in medical school... Likely #ZERO. Unfortunately US medicine = Treatment of Disease

Resting heart rate, sleep, weight, water intake (I do .5 body weight in Oz.), binary pencil lead, all trackable daily. Blood pressure and 5k (for me anyways) little more planning needed. BMI - curious how you track that @ACN1?
It’s just another measure of weight really, so the simple answer is “weight”. I have very specific fitness hobbies that are very measurable
