The Post is a decent place to grab some drinks and food, there is a a big terrace upstairs that is a nice
Musuem district: Museum of Natural Science or MFA
Shopping districts: Rice Village/Highland Village/Heights MKT
Short activities: tasting at a brewery, putt putt golf at Puttery, darts at Flight Club, walk the Everglades at Memorial park, discovery green
Take them to a local dinner spot: tons of options all over town
Events: shows at Hobby Center/Alley theater/Miller outdoor, Astros/Rockets game, concert at white oak music hall
If you want a whole day excursion - NASA or Galveston
If they want to shop - River Oaks District (more upscale) or Highland Village
If they are outdoorsy - Memorial Park (Eastern Glades area, or the Hike and Bike trails south of Memorial Drive for a more nature feel).
For a nice weekend stroll - park along Heights Blvd and walk the path in the median. Get Kolaches at the Kolache Shoppe or hit up Melange Creperie or Local Foods, and stop in some of the shops. Or head along the path to MKT.
Your local highway intersection gas station for the most honest portrayal
Seriously though the MFA, Buffalo bayou, see if theatres in town, take them to get some great dim sum or south Asian cuisine, lots of options
Tried to list things not already above - Kemah boardwalk, Just Mac, Brazos Bend (state park with lots of alligators and walking trails), Pinkertons BBQ, there is an underground cistern downtown that is very cool (previous water supply for city)
Seconding the Cistern. One of the coolest and most underrated things to do in Houston
Alley Theater they have a Sherlock Holmes play right now.
There are some good day time bars in the heights
Also this is the time for the zoo and Miller Outdoor Theater things because the weather is pleasant.

IFly for a pseudo skydiving experience
Millet Outdoor Theatre for free performances (covered seating or grass)
My mom is so happy when I take her to a farmers market to see local produce and goods. I'd recommend Urban Harvest on Saturday mornings. Also, she loves hermann park and the eastern everglades for a nice scenic walk.
I haven't been, but I've been meaning to go see James Turrell's twilight sky space at rice university
