Platformers, RPGs (the non swords and sorcery kind), racing, sports, etc. if you are being pushed to try something (which is a bit weird), hopefully they would bring suggestions too?

There are games about a lot of different topics or ways to play, so start with what you want to experience and you'll have an easier time finding something that interests you and holds your attention.
For instance - my girlfriend and I played a puzzle game called "the Pedestrian". You solve puzzles based on street signs and warning signs. Simple premise, lots of fun.
Social strategy games. They tend to be very simple and you can play casually whenever you find a few minutes. The driving force is social, and it's very easy to get invested in a game after 2-3 turns.
Diplomacy (many, but my favorites are https://diplicity.com and https://www.backstabbr.com/) />Subterfuge (http://subterfuge-game.com/)
Neptune's Pride (https://np.ironhelmet.com/#landing)
If it must be a more typical video game, go for something narrative like last of us or heavy rain.
If you like historic stuff, kingdom come deliverance is great and very accurate to middle ages Bohemia.
Civilization 6 is the only game my wife played her entire life, but she stays up till 3am with it sometimes.
Games are like books. It's a creative medium and 80% of it is shit. But there's always that 20%. Whenever someone says the don't like books it's usually because they haven't found one that frames it probably for them. Games are the same way.
What platform are you on? Because other than Civilization 6 and the recent Assassin’s Creed games, all my recos are PlayStation exclusives: Ghost of Tsushima, Horizon Zero Dawn/Horizon Forbidden West, The Last of Us, God of War. These are deep, storytelling-focused RPGs that do have combat but are not first person shooters.
Try something collaborative where you both work toward a common goal, Overcooked 1+2 are great for this
