Thanks! Any suggestions on what type of consulting field? I applied to a couple jobs at big fours that I thought my background applied to and only heard back from one. They ended up not moving forward because I didn’t have experience in one type of ERP/MES software, but have used similar software which I found odd.

You shouldn't feel too odd doing this kind of thing in you country. All my bosses are automation engineers, from manufacturing industry. They're basically you lol, or at least close enough. If you want to provide services to the healthcare sector than just go to the websites of the firm's you're interested in and find yourself the best option.
Just be confident, you WILL be valued.
