Start sending her calls to admin (if she isn't calling your personal number) and just have them tell her you or whoever she wants to speak to isn't available because they're working hard on her case. I've seen partners do this with overeager clients for years.
Sounds like a great opportunity for more $$. Just keep billing her.
I had one of those. Are you billing her for these calls? If not you should.

Is the case chargeable on an hourly basis? They can talk all they want, but when the bill arrives, they may reassess.
Let it to go to voicemail other than once a day or every other day. Respond by email rather than phone. In one of those emails, offer to set up a weekly check-in call.
Become difficult to contact without an appointment or by email. That may feel rude, but you have other clients who require your services as well. I know a number of highly successful firms that only make phone calls by appointment.
It's okay to set limits. It's okay to respectfully say, "I will call whenever there are any updates." I don't expect an update for X number of weeks." You may even position it as if you care for them, such as "there's no need to get worked up over this. I don't want you to be stressed out. Personally, I believe you should try to get this out of your mind for a while and live your life."
Anything that isn't urgent, such as asking if there's an update when they were informed yesterday that there wouldn't be for long, I'd advise not responding to for a day or two.
