Build your own cloud environments and then learn to monitor
Keep studying. Volunteer for anything remotely cloud related at your current job. Add to your resume and back it up in the interview.

Here I'll give you a cool task to do
1. Send all your home network logs (router and laptop logs) to gcp over a vpn from your house to gcp
2. Drop them into some sort of storage
3. Clean them up and send them a database/bigquey for analysis
4. Figure out what to log for. I'll give you a few hints - determine your baselines. Then get the basics....logins, firewall hits, admin / priv logins. Then do some threat hunting
5. Use data studio to visualize this
6. Set up notifications
7. Set up identity aware proxy to serve as the front end authentication to Dara studio
8. Setup firewall rules to protect connectivity
That's a pretty cool project to build your skills. Has a mix of networking, iam, logging, monitoring, app development, remote access, and hands on stuff
Extra credit....learn to set all of this up with terraform
