I lost my job in March because of covid and ever since I’ve been working independently with clients. I start my new full-time job in January but am also planning to start an LLC so I can work with my clients too. I am planning to hire a person from overseas who can help me with all the development work. Does anyone have experience with this? Any tips or advice will be appreciated.

Your full time employer allows moonlighting? Almost every real company I've met does not allow this. I'd clear that first... or if you really want the side gig, perhaps re-cast your full time role as a long-term consulting gig. I've done that in the past.

Most companies have a moonlight clause preventing you from developing IP (including customer lists) with company institutional knowledge and assigning that IP to yourself, making money doing the same work as for your day job using institutional knowledge (e.g., upselling services to customers/clients for your moonlighting company), and moonlighting on their dime (working on your night job while clocked in to your day job). Even then, unlikely company will come after you unless you use company resources to steal business or piss off customers.

EY for example (I'm sure most big 4 are similar) heavily frowns on it and has you sign employment terms that assign all IP to them irrespective of how it was developed, which is absurd and likely unenforceable. You can still get approval for "secondary employment" and I got the legal team to drop the absurd IP clause (and tighten it to things related to my work at EY, which is standard). Helps to negotiate upfront on this.

You can moonlight almost anywhere I've worked as an engineer. Just has to be fairly unrelated to your day job to avoid a claim on the IP you create or revenue you generate.

I do miss seeing my colleagues sometimes but being able to actually use random breaks in the day that you get in transactional, especially as a junior, productively (work out, cook a meal, fold laundry) has made this job so much easier and sustainable for me. It’s still exhausting and so unpredictable and the December crush is killing me but I don’t know how anyone did this for more than a year or two pre-Covid when people spent all day and evening in the office.
