Create a slide/piece of your portfolio that visually speaks to your process and use that when asked the question. If you have it handy, you can say that you have something ready to go that helps to display your process. On a phone interview, just look at it yourself. If not possible to bring it up during the interview, then envision your visual in your mind and deliver the same spiel.
As a hiring manager, it’s pretty clear when someone is nervous or simply just not as outgoing as other folks. I recommend doing extra work to show your want to learn, grow, and develop. Consider talking clearly about what you learned in each project (both hard and soft skills). Process comes in a lot of forms and if you are looking for mid-level roles most people are looking for designers they think they can actually coach to fill the gaps in their skills.
i do the same thing… i first create a notion document about the company’s mission, who the founders are, culture, work, etc. i try to get to know the company and role so i feel confident when the initial interview happens. i also document my product design process such as frameworks and common methods in the design thinking process. i review that document the day before and an hour before the interview. it helps me gain more confidence especially when sometimes the words are stuck in your head.
