You don’t know 1) their circumstances. They could have taken that job out of the necessary flexibility. Maybe they wanted a few short term gigs. Maybe they liked the hours. 2) you don’t know the compensation. Just because titles are different, they could be making more at this new role.
Very easy for you to judge and look down on the new gigs, but don’t.

Sometimes the longer you stay at the same company the more stale your skills become. Especially if the company is stagnant, simple and uses Quickbooks.
There are so many factors here, first of which, what size company were they a CFO at? Was this a large enterprise, or a $25million budget that my buddy in the army without a CPA or other accounting experience manages? Are they looking for full time employment, or finding a cushy income stream in consulting work as they start off retirement?
There are people that post accounting / finance career become contracted financial officers for smaller businesses. So you may run the books on an hourly basis for 4-5 small businesses at once for a few hundred an hour. I’ve heard of people doing that for a partial work year and side income all the way up to full time consulting roles and gross pay >$250k
