I start feeling that way every time I hit the 2 1/2-year mark at a job. Like, there's nothing new to experience in this environment and I need to move on. Sometimes, just having a new company and a new set of coworkers can be invigorating.

You’re absolutely right. Once you learn everything, you kind of go into autopilot. A new role or company brings fresh challenges and helps you build new skills to keep growing.
It really sounds like you need to find a new job, doing something different. Customer service can get to anyone after a while, it's just relentless problem solving. Brainstorm what you'd rather be doing, and try for some different positions. You've definitely got some skills you can carry with you, it's just a matter of deciding in what direction you'd like to go.
