Hard to say for sure but if you're living on your own, don't travel overseas often, don't have any major vices, I'd confidently say you can apply the law of thirds at the very least (1/3 of your salary to savings, everything to do with accommodation, everything else like groceries and entertainment and transport etc). If you can spend less on the last (accommodation and everything else), then sure, your goal of £2k or more is doable. A quick Google search for cost of living in Bournemouth makes it sound easy to do 🤷♀️
Without your tax code, the best estimate I would say is £4600 take home per month. Bournemouth is cheaper than say, London, but it’s not a cheap place to live. Not sure if you’re renting, buying, if you’ll be driving etc so hard to say if you can save that much, especially with energy costs the way they are.
