As a TDLR - if you're sharing your portfolio site, password protect the case study, redact the client's name and any data that are confidential. If you're in the portfolio presentation round of the interview process, make sure to share a deck. You can describe the client as a [type] company from the [xyz] industry. Talk about the process you and your team took to get to the work you've done, or you can focus on one part of the process. In my portfolio I attach the disclosure policy for certain project at the first line, which seems to be another way to show reliability to the reviewer - kind of beneficial to your personality.
Regarding the showcase of project, I mostly emphasized on the research, collaboration, AB test and process. Even though most of the deliverables cannot be presented, at least you are showing your mindset and proving your ability to collaborate in a team workflow. You may want to present what values you brought to the product (update or new creation) and how it benefits the client or customer. In my project I recreated some screens using total different colors, icons and UI components, and AGAIN emphasizing "this is a simulation of product, the deliverable is subject to disclosure agreement, xxx". A professional recruiter will surely notice your skill from what you provided, regardless of what the product "really" look like.
Thank you so much for giving me some guidance on this! I started to update my case study presentation to include the disclosure policy at key points. I’m definitely going to work on updating some UI components to give a better simulation of what the product actually looks like. With these added tips, I think a recruiter will be able to find a see value between simulated UI components and UX processes. Thank you for the pointers! 😊

In my public portfolio I focus on materials from released software or projects. Anything that is publically available cannot be covered by NDA (though some of the process and early designs might be). I do have a few examples of unreleased work from former companies were the project was cancelled. My feeling is that if the project was cancelled it is unlikely the company will bother to come after me for referencing the work I did.
I have known some Designers who recreated sanitized versions of their design work so it would not be covered by NDA. They removed all details or identifying information that could connect it to the company or project. In their portfolio reviews they say, "I cannot show you the actual designs or the finished product, but this should give you a sense of what I did." Everyone understands and it usually isn't a problem.
