Interviewing with a few companies and if I do get an offer, I will start in early January 2022. My wife and I are expecting our first child at the end of May. When would it be a good time to bring up that my wife is pregnant once I’m on a team? How long should I take off?

You disclosed what?!
Why?
You lost your leverage
Why not put a range and add at least 10-20% higher than your current salary
Coach
You respond back that you need more than that to give up your current role - 10% on top of what you earn currently
Tell them what you want. Negotiations are expected. Remember that your worth is tied to your experience and schooling (if required), and they do not have to "bring you up to speed" on how the job is done.
I happen to like Andrew LaCivitia for figuring out my negotiation. He's on all the platforms, but his YT is easiest to find specific videos. Below is a link to a few of his salary negotiation videos that i found helpful.

They interviewed you for four rounds and extended you a pay package that means they want you. You have to stand on what you want, even if you have to remain where you are. Stand up to them now they are showing you who and how they work. Show them how you play.
They can offer below but I would negotiate up. I think the only ploy is that the company is trying to get the biggest bang for their buck.
This is exactly why you don't disclose salary. And if you have no choice, why you should always add a disclaimer that you need your current salary +X% to justify the move. Counterback to a number above what you're willing to accept and if they won't budge, move on.
Did the job posting have a salary range listed? I can't remember the last time a recruiter (or anyone else) asked what my current salary, but have been asked what my current salary expectations are, and the range I give them is around 10-15% higher than what I am making now, depending on what the role is.
Instead of giving them your current salary, I would have told them what my salary expectations are. You can counter with something that is more in the range of what you are looking for.
