If a customer mentions a specific employee in a positive way on a customer feedback survey, we get a little $5 coupon to use on various things we sell. Plus, an entry into a raffle for a $30 gift card that gets drawn at the end of each month. And I need some extra coffee money! Can you suggest ways I could encourage people to take the survey?

You can outright say "it would really help me out if you took the survey at the end of this call to let them know how your experience went"

Is it a survey you have to call in for? How easy and quick is the survey definitely matters. Also, do you mention the survey when you hand the receipts?

You can simply ask them. It feels rude/scary at first, but you get used to it, and the vast majority of people don’t mind.
