I think it's important to approach each interview with an open mind and be willing to consider all aspects of the job, including the compensation structure. If you go into the interview knowing that the commission structure is a deal-breaker for you, it might not be the most productive use of your time. However, suppose you're willing to hear the company's perspective and weigh the benefits and drawbacks of the job. In that case, it could be a valuable opportunity to learn more about the company and industry.
Just depends what's most important to you individually -- your resume or your happiness. ;)

If the commission structure doesn't align with your career goals, it might not be the right job for you, even if it would look good on your resume. So, I wouldn't recommend interviewing for a job you know you won't be happy with in the long run.
I think I would not. Maybe because I know myself a lot that if I will go for it and end up not liking it in a matter of weeks, I will be just punishing myself and the company I work for because they will not the best performance from me.

Only 3 jobs worth considering: 1) work for the 800 pound gorilla because senior executives MUST meet with you. Help those execs succeed and build your Rolodex. 2) find a start-up that solves a problem that's truly vexing senior execs. Bring your Rolodex, your sales process and your proven results to this company. 3) stay where you are until #1 or #2 appear.
