If you go back to your previous way of eating, you could very well gain it all back and then some. The best way to do it is slowly incorporate complex carbs like sweet potatoes back into your diet, while still avoiding things like sugar and starch, until you find a good balance you can maintain.
Coming in and out of keto (after fat adaptation) shouldn’t have any adverse effects, although it can be difficult to not give in to all the cravings for carbs, or at least it was for me. That’s actually my goal is to have this metabolic flexibility. Some people even do this intentionally, or cyclical keto.
You will gain the weight back if you are in a caloric surplus. However, if your calories are consistent, you may see a change in body composition depending on how much carbs you reincorporate
As someone who did keto hard, lost 80 pounds in about 6 months (275 to 195) and then went back to my old ways I gained it all back. You don't have to stay on keto hard forever or anything, but you have tk realize it's a lifestyle change, and if you go back to junk food, you can easily go back to how you were.
Regardless of what diet you use to lose weight (keto, low carb, Mediterranean, etc) if you stop eating that way and go back to your old eating patterns, you will gain weight. That eating pattern is the thing that caused you to gain the weight. It doesn’t magically change its impact because you lost weight.
