You could look at it this way - do you want to work for a company that is so weak in your area than its farming interviews for free consulting? And even if they are, do you actually think they could implement your suggestion without you?
I had a candidate a couple of months back very awkwardly answer a couple of questions about how they’d apply their previous experience to my role. It ruined what had been a good interview - when I pushed them about it, they said they didn’t want to give me their ideas for free. They did not advance to the next round.
Overall - put your best self forward at interviews and leave the “free work” worries behind you. As the previous poster said, show them how you’d approach solving their problem, but keep it light on operational details.
I wouldn't worry so much about giving away free advice or a free good idea. If they recognize it as a good idea and are impressed with your resume/skills then they'll hire you. I don't think many hiring managers are looking to steal ideas from people they're interviewing
IDK I’ve read so many stories of people getting rejected then finding out later on their ideas were used, that’s why I’m concerned and sceptical about this method, but you may be right that most aren’t doing that at all
People often think their ideas are being stolen, but the reality is that ideas are really nothing without the implementation. And the chance that someone from the outside could suggest an idea that would be easily implemented is not great. If the subject comes up in the interview, a good approach would be to say that you'd like to learn more about the challenge they're facing, or you could brainstorm a potential solution to it. What may matter is showing how you would approach the problem, not that you could pull some idea out of your hat.
