Have they already switched your visa? If so there is a serious implication on you if you leave the job, as they will notify Home Office and the visa can be curtailed. Otherwise probably if you back out they will not put up a lot of mess as it’s easier for them to just move on.
Not unless you’ve already made an application (using the COS issued by the new employer). Also, assuming you haven’t resigned at your current place of work.

A1/C1: new employer has not made an application for new CoS yet. I have also not resigned yet. In the event the new employer makes an application, but I decide to not pursue it, does it curtail my existing Tier 2 visa? That is, if they apply for a new one does it mean the existing one gets automatically canceled? Not sure how this works so any insight would be appreciated.
Your best bet would be to discuss your exact situation with an immigration lawyer / advisor. Personally I do not know how applying for a CoS can get your leave affected, but in case your new visa goes through I don’t think you will be able to work for your previous employer past the start date of your new visa. Also if you resign from your new job once your new visa has been issued (not CoS but the actual visa itself) it will lead to your employer notifying Home Office and your visa getting curtailed.
