Got a random email from a supposed Amazon recruiter for a SDE position (which is not at all a fit). The email is amazon.com domain and there are no red flags in the body but it doesn't feel like an Amazon recruiter due to the tacky signature, etc. Has anyone seen this kind of cold-calling from FAANG recruiter?

What you should say: “I’m more concerned at the moment with talking to you about discovering whether we’re a mutual fit. If we’re a great fit, then I can be flexible on the numbers with you and you can be flexible on the numbers with me. If we’re not a great fit, then the numbers are ultimately irrelevant, because your company only hires A players and I only work at roles I would be an A player at.”

Tell them you want to see the anonymized pay subs of others in your proposed role.

Your salary history is none of their business. Just tell them your target range.
Whatever you do don't lie. Your future employer can easily find out what you were making with one phone call. A friend of mine had an offer rescinded from another big 4 because he lied about his base to get a higher offer. Firm made the offer, he accepted and left his old firm to travel. A week before his starting date he gets a call from HR asking him to explain the difference between what he put down as his salary and his actual salary that they had found out. Hiring Lerner ended up rescinding the offer.
Hide. They can ask, but you can keep avoiding and ask them to anchor the number.

BAH1 - no, probably not, but it would be a good way to say no to their request. "I'm happy to share that information on a reciprocal basis. Would you be able to share...?" "No? In that case, I'm happy to share my desired salary and proposed role and would gladly respond to your perspective as well."
I've actually seen someone tell the potential employer that he cannot divulge his salary information / package because it is considered proprietary by the firm he was leaving. Didn't go over well initially but they liked him enough to make him an offer and then verify afterwards.
He just didn't want to give them anything until he had an offer in hand. Once he had it it didn't care, he was jumping ship.
They can ask and say its policy but you can decline. They can ask how much you make at your previous job (which is iffy in itself) and they can ask what you wanna make but asking for a pay stub that's junior league. I hope someone can help ya with that.
