If you don’t know what someone wants, just ask them what they’d like or don’t get them anything. Crowd sourcing from strangers for generic gifts doesn’t usually lead to the receiver getting something useful for them.
That’s a great point, I know if I were to ask he would say he doesn’t need anything, but wanted to get something just to show appreciation!
Maybe a cooking tool. You can get good deals on stuff right now. I got my dad an automatic pepper grinder to add to his bbq tools. Maybe a book or something techy if he’s spending a lot of time indoors bc of the medical stuff

I always do a joint gift for in laws bc of this exact issue. Very easy to find a gift for his mom, SO tough w his dad. Maybe a consideration for next year!
I generally stick to something small but considerate, like large beautiful poinsettia for their house, savory or sweet treats, a momento from recent travels, etc. Hope this helps!
