Got my first pay check! Trying to understand all the taxes on it….Are state taxes on my gross amount or do the federal taxes i pay get deducted first then state taxes on that amount?

Question, if you pay off your house isn’t a 100k salary more than enough to sustain a good lifestyle? My goal has always been to payoff my mortgage then find a really easy analyst role to sustain my expenses. Hello! Looking at an opportunity with established startup in UK that's just been acquired by a large co. I'm US based and my salary is around $250k (NYC) -I've been asked my expectation without the startup giving me a range to work from (though I've asked). I'm not sure how to reply to them because I have a feeling that my requirement may be out of their range and while I don't want to undercut my value, I also don't want to be cut out of the process because it's an interesting co. Any advice?
