If you have an older iPhone say iMessage drains your phone battery for some reason.
Had a boss that would do this at like 2AM (all work-related). In a dazed semi-sleep I blocked his number. Then when he kept following up in person I would just say I never got his texts and something must be wrong with my phone (my phone looked like it had been through hell so it was believable). He started emailing.
It took me a few months before I realized I had straight up blocked him, but it worked for me!
Just tell him that you prefer to keep all work related communication on emails and slack. Does he not have slack on his phone? Btw, better for everyone involved if you’re ever subpoenaed. When this happens to me I reply back via slack or email. It’s sooooo passive aggressive, but gets the point across.

Just write him back via slack a few times he’ll get the idea.
Tell him you need your work conversations in slack or email. That’s how you search for job details and requests. That’s so rude.
I’m a two phone person. Personal and business. I don’t give my personal number to anyone but my assistant with strict instructions on how/when it can be used.
Why?: I need to be able to put the business phone down on my personal time and go skiing, hiking, golfing, to the opera, whatever, without Work intruding my mental space. I don’t want to see you’ve texted me work stuff when I glance at my phone to see if my daughter text me where to meet for lunch while I’m on a ski slope.

If you don't want iMessages, the best way to make that happen is by directly requesting it. Sure, he could be butt hurt for a few days, but that too shall pass.

As a producer the volume of calls emails texts from vendors u know plus others courting u is huge. Family urgent things & Dr calls we’re getting lost in the mix. I like space from work & not sharing personal info helps.
I will do almost anything to avoid Slack *shudder*

Turn on read receipts so you can more effectively control on your end.
May not entirely help with the anxiety of receiving the texts, but at least you can have a way to manipulate and control it.
Always answer via other methods, never the phone.
I never share my personal cell phone number with people at work it opens up to much. I created a google voice number that I use or I give them my parents house phone number.
If I called an AD to ask a question about a project and their parents answered... you’d look unprofessional as heck
