How likely is it that blanket L1 gets rejected? I will be having my interview soon and quite nervous that I don't get approved.

I just started with a company as an HR Generalist. Within the 3 weeks of being there, my boss’s boss left, and today I found out my boss gave notice. HR is not valued at the company and it’s disheartening to know I was hired into a mess. I am now actively looking but how do I explain to other employers why I am actively looking and what do I put on my resume? I have never had to deal with this before.

My current company's notice period is 3 months, due to which I'm unable to get any interview calls.
Resigning without an offer is not possible at the moment due to family responsibilities.

Do you know any companies which will accept three months of notice period?
Or how do I tackle this situation?

I resigned last month and my manager said he is trying to retain me. I had a call with HR and I explained my expectation. Now, I am getting profiles daily to evaluate. Candidate has similar experience and working on the same technology stack.
I knew that my manager is looking for my replacement but he is still pretending that he will retain me. I don't understand why he is doing like that.
Do I need to evaluate the profiles?

I am finishing up a project and I’m trying to document what I’ve done for my resume. What are some good metrics for someone who mainly created user stories, created dashboards, interacted with the client and developed statistical models? During my interview process I clearly stated my salary expectations of 95k-105k. They came back with an offer at 80k.
