Wow I've never heard of this. Seems pretty unprofessional. I would shut them down gently and make the decision that's best for you and your lifestyle. Don't let a guilt trip influence your decision too much.
I think the best way to approach this situation is to be honest and respectfully explain why you don't feel that the job is a good fit for you. You could say something like "I appreciate the opportunity you gave me, but I don't think I'm able to contribute in a meaningful way. I would like to explore other opportunities that will provide me with more personal and professional growth." It's important to remain respectful and understanding in order to avoid any further guilt tripping. Hope this helps.
If your manager has no control over pay she should expect you to move on and not stop you. I worked for a small business part-time and got a full-time corporate gig for significantly better pay. My old boss (the owner) was clearly sad I was moving on but 100% understood, realized there was no way he could compete pay/benefit wise and thus held nothing over me. Your manager should expect high turnover due to the pay and not hold it over anyone.
Good on you for knowing your worth! Your manager recognized that and wants to keep you. However, they should want you to progress. It's a massive confidence issue on their behalf. You will do well !!
Your manager is just trying to guilt you into staying because they're concerned that their own workload is going to increase when you leave. No reason for you to feel guilty about it; employees leaving is all part of doing business
