Feasible? Yes.
What would I do? I would do as leadership tells me so long as it is legal. Advocate for the people where possible, but ultimately…the Executives are in charge, not HR.

I’ll be frank, do what you can while you can - HR is a challenging role and if they were to let you go, you’d get some dedicated bonding time and a bit of a break. But a population of 200 isn’t bad. A colleague and I are managing 900 folks in North America currently.
I feel you, and I see you. I’m in a high growth company that followed a similar structure but it’s been mergers, acquisitions, private equity ownership, culture changes, management and colleague changes.
It’s all a learning experience - but if the stress is too much, I’d recommend looking for an out. A new job might be the best solution or hangout for a package if you can tolerate it.
If HR is there solely to create joining contracts and handle departures, yes. Anything else an HR department should be doing will be missed and turnover increased. Could you have an open discussion about what you think HR SHOULD be doing and how many people at a minimum would be needed, all neatly documented for review ? Focus on the value of having more people, vs. the cost of rehiring, loss of experience, knowledge and productivity etc… Good luck

Honestly, that sounds like a huge amount for one person, especially with a newborn and major change happening. I would be worried about burnout trying to hold all of that alone.
