OP, you also need to ensure you're getting enough protein to prevent muscle loss. Think of carbs as a max, protein as a minimum, and fat as a filler. There are many Keto people who tout that you need excessive amounts of fat to be in ketosis, you don't.
If you are trying to build muscle or lose fat, you should eat at least 0.8g protein per pound of lean body mass. More won't benefit you, but it also won't hurt you. If you're overweight, your fat needs can easily come from stored bodyfat, and you can eat as little fat as possible without hating life.

You honestly don't need to test. Reduce your carb intake to 20g or less and you'll be in ketosis.
You also shouldn’t consume excessive proteins. Keto requires that ~65-80% of calories come from fat and a max of 15-30% of calories come from protein.
