Continue to ask for the work and show interest and ability in that area. Seek work from others that work in that area. If you never get the work you want, look for another place to work that focuses on that area of law.
I understand your need to broaden your base of experience, but you need to understand the firm's need to put their best people on their clients' cases. In your case, you have somehow been pigeonholed as the "premises liability" attorney and they apparently depend on your skills in that area. Don't pester the manager. You may ask periodically if they have any injury cases, criminal cases, tax law cases, real estate cases, etc. that you could possibly assist with, if not handle completely on your own. Otherwise, the answer to your question of "What do I do" is "Do what you're told to do." If that become unacceptable, then you need to find a firm willing to accommodate your needs rather than force you to accommodate theirs.
