I make a few low fat variations on this theme:
Italian version:
Rice crackers with tomato paste spread thinly, sprinkled with shredded cheddar or Parmesan then microwave 20 sec.
NY deli version:
Rice crackers with a schmear of cream cheese and a slice of dill pickle and cracked pepper.
Mexican version:
Rice crackers topped with avocado, salt, chili flakes and a squeeze of lemon.

a salad so big it needs to be eaten out of a mixing bowl or a sleeve of those thin square shaped rice cakes. Also addicted to those Unreal brand m&m style candies.
