In most cases to:
a) Understand your timeline constraints (e.g. if you are further ahead in the process at other places or have pending offers), and
b) to better understand your search pattern (probably less relevant for consultancies, but for example how specific you are in the type of role you are searching for as an exit)
Exactly. We have to ask this at the end of the first round to understand how quickly the recruiting team has to get the person on a second round interview day (a). Additional it helps to understand if there is consistency in the roles or a certain industry interest that we can leverage in later stages (b), e.g., highlight a previous exit in that industry during a offer conversation.
Always say yes. You are speaking to select few firms (typically competitors).
To see who else might give you an offer so that they can lowball you as much as possible. Always say that you are interviewing at other places, and are in final discussions with some, but not all of them. Never say which places. It will expedite the process and prevent lowballing.
Better to always do as well as you can in the interviews and then to ask high rather than let an employer make an offer

Usually we ask this to understand what’s your timeline since we know how long our interview process takes. Helps us to understand how quickly we need to move or if it’s unrealistic given where you currently are, etc.

I always voluntarily disclose at the end of the phone screen or first interview so we can level on timeline.
I've actually had very good results doing this.
