I think if you're struggling to get hired in an entry level position, you might consider doing some volunteer work. It's not the same as job experience but it will give you real-world experience and will also help you make networking connections so that you might get hired by a referral!
I have a 120 hr internship I forgot to mention so I do have some volunteer experience but I get what you’re saying
I started at an animal shelter (open intake) in customer service and when a position opened up in the medical department I applied. I did not have prior veterinary assistant experience and learned it on the job. A shelter may be a good place to look and build experience.
Like the above said I started as a customer service rep when I was going to school and then transitioned into a veterinarian assistant position. It takes time, keep trying, and don't give it. The right job is out there for you.

I started as a Kennel Assistant while going to school for vet assisting. Because my employer was aware that I wanted to work up to that position, they helped me by transitioning from one position to the next with proper training. I did learn more skills from other hospitals but at least my foot was in the door so it made it a little easier by observing and just being proactive.
