Menemen is Turkey’s answer to Shakshuka but instead of poached eggs, they are scrambled. Onions, green peppers, and tomatoes are sautéed in butter and simmered until it forms a sauce. Eggs are cracked on the sauce and the yolks are broken and mixed into the sauce. It is then topped off with cheese and parsley.
This dish goes perfect with Simit (Turkish bagel) used to scoop up the flavorful sauce and melted cheese. Yum!
