My current culture now. The director does not even seem to acknowledge the staff. The unit manager doesn't walk around and talk to anyone. No real training process and lack of interest in really getting to know me.

A red flag that a company culture is terrible could be employees constantly voicing dissatisfaction with their jobs, high turnover rates, or general unhappiness in the workplace. It could also be signs of a toxic work environment such as bullying, fear of speaking up, and a lack of respect or trust among employees.
“Fast paced and/or dynamic environment”
You will immediately start being required to accept more work (often beyond the scope of the job for which you were hired) with shorter deadlines and no increase in pay as management plays a never ending game in which they attempt to figure out if an entire department can be replaced by an intern.
"Be prepared to wear a lot of hats" or " Ability to multitask on demand" are two huge red flags that mean you're going to end up handling everything.
Ohhh yes, that comment about wearing many hats is a huge red flag for me too.
“We’re like a family”.
No, my family is like a family. You are my employer. Pay me for my time or else I’ll go spend it with my real family. LOL
If they say "old fashioned" immediately ask if that means there is strong union for the employees and the owner of the company only earns 21 times the average workers wage and there is a company sponsored retirement pension.
THAT is the definition of old fashioned I'd like to see used.
"Flexible schedule". It sounds like you'll have some control over your schedule, but what it really means is that you'll have no set schedule at all and be expected to work variable shifts and hours with no consistency or predictably, usually with little to no notice.
If I’m in an interview with a company and the HR describes the company culture as “old fashioned” that’s an immediate red flag. Translation: expect you to work late without extra pay because you’re “dedicated”, ridiculous power plays and office politics, pizza parties as a reward, expect any team building and “fun” to be done outside work hours on your time, etc etc.

At a previous job, they hired anyone who walked through the door. There were no job interviews and no kind of selectivity. Just vibes.
The biggest red flag in my old job was the dislike management took for people taking on more responsibilities. It detracted from their two main roles, answering calls and sending emails.
. The company skips really common steps in the hiring process (e.g., making an offer without interviewing you, not putting an offer into writing).
You don't feel a good sense of rapport with the hiring manager or anyone above them that you'd work with. Also, you don't get good answers to really basic interviewee questions (e.g., "what are the best and worst things about working here", etc).
Company demands loyalty in all things, but does not reciprocate putting jobs at risk for even minor mistakes or omissions. This includes firing employees for the sole purpose of budget reduction or avoidance of additional employee costs -- including perks, benefits, pensions, etc.
For me, when a company does not respect private/family time and the employee is expected to engage 24/7 via telephone, instant message, chat app, email, or scheduled check-ins.
