You have two options:
1. Break up with your gf
2. Never leave consulting
Both will get old. Be happy now
Give it a month and if things don’t change then break up you should enjoy spending every second with your significant other.
I think people who say they are happy being around each other 24/7 for several weeks either are happy despite the circumstances and somewhat annoying things of their SO, or they don’t view them as annoying/ care too much about their SO’s habits (in terms of lower your expectations). I think every person has the potential to trigger you at some point, it is just a question of how you deal with it.
Maybe try this before breaking up?

What habits annoy you? Have you tried pointing these out to her? I can guarantee there are habits of yours that are getting on her nerves as well.
Being confined to one space, plus working, sleeping, etc. in said space is unprecedented. As someone mentioned, it’s a look into what could be but also evaluate the habits and see if you can express these to her. She may not even realize she’s doing it.
Point out a woman’s flaws??? Now that’s a box Pandora herself would be loath to open.
Everyone can be annoying but the difference is do you love the person regardless or are they so annoying that things that never annoyed you before are now annoying you and they just can’t do anything right.
Have you been on a vacation together? That's the true test.
We've been married for 30 years and we both want to choke each other multiple times per day. We are way beyond the honeymoon phase, but we've never fought like this.
But, we know this is not normal, and not what our retirement (that's closing in) will be like.
This too shall pass.
Imagine breaking up with her and having to continue the quarantine with her for another two months
Her habits annoy you. So, the issue is in you, not with her. Everyone is different and you will never find a person that doesn’t annoy you at all.

Lol. Sounds like you’re in the same relationship I am in. I’m the lazy butt that doesn’t clean though.
I’d recommend you set boundaries and expectations with your SO. My boyfriend and I had a chat and things are working so well!
I pay more rent than he does now. He washes our clothes and does the dishes when I cook. He loves to clean and it helps him reduce his stress. So I go garden or play video games while he cleans with his headphones on...
There are times when he asks if I can help and when he does I stop doing what I’m doing and help out. Having a clean home is super important to him so I try my best to help him maintain it clean.
I’d say talk to her about it. And if you already have.. set boundaries and it that doesn’t work.. run.
Sooner you accept that this is your fault, sooner you'll be in a relationship bliss.
Option A- Obsess over your girlfriend's shortcomings. At night build a wall down the center of the apartment, take the kitchen and bathroom for your own. In the morning, demand retribution for the cost and toll that her reckless sandwich making, dirty dishes, and general filth have had on you and your people (battle cries and makeshift war drums ie pots with wooden spoons recommended). Declare war on her side of the apartment! Do not rest until justice is served.
Option B - Tell your girlfriend she forgot to clean up her sandwich stuff and it's really irritating you.
The habits she has that annoy you won’t go away. With that said, in normal times you can go away for a few hours and take a break. This isn’t normal times
If you think this is limited to one girl for one period of time, you’re gonna be in for a rough time if you ever get married....
Interesting that human beings are quick to think the problem is outside and never bother to look inside. What contribution have you made to this situation?
You should get her a Peloton
Divorce before marriage?
Look in the bright side...Covid-19 has saved you a lot of money in attorney’s fees and half your net worth.
Why are you telling us and not her.
.
Speaking from personal experience - anything that annoys you about the person while only dating will 100% escalate into a snowball after you are married. Happened to me and now I can’t wait to divorce! If you can’t tolerate her now, you will never be able to.
