Be empathetic and sincere, and where appropriate signpost them to resources that might help. If it gets too personal or too much for you, have a line that is kind but firm to put distance and direct them elsewhere.
I agree with CM1. You can be empathetic without getting too involved with their situation -- and ultimately, that will be best for your working relationship, even if it feels like you aren't doing enough. I commend you for doing your best. The fact that you want to respect them and you are still thinking about whether you responded in the best way shows how much you care - and I'm sure they felt that!
make sure to listen to them, validate their feelings, respect their boundaries, offer support, provide resources to them, and make sure to follow up with them.
That depends on the issue that they discuss with you. Sometimes they just need someone to talk to and someone that will listen to them. Just be sincere with your response and always take the ideal side of the situation.
