Honestly naive to the idea of refinancing. Are there good resources to describe the process, pros and cons?
So I was in the same boat as you two months ago. Totally naive but open to the idea of learning. What I found helpful was asking around my friends who also had a property and seeing if they had a mortgage broker they’d recommend.
Basically, a mortgage broker is someone that does the haggling for your and finds the best rate for the amount of loan you have and how long you plan on living at your place.
As long as you plan on living there for another 2 years or so (assuming you have a large loan), refinancing is the way to go.
I had a brief 10 minute call with NewFed and saved hundreds a month (i.e., thousands over the loan lifetime). If you live in the boston area, I can recommend my person.

I’d invest in mutual funds/ETFs over making principal payment. Can get better returns than 3.75%

Why haven't you refinanced? If you have less than 20% equity, I imagine it's a sizeable loan. Probably worth getting a 2% range interest rate, unless you don't plan on staying in the house much longer.
Have you contributed to an IRA yet? Do you have access to an HSA?
Lastly, if you don't want to look at other investment opportunities like investment properties, I'd put the extra money in a brokerage account and hold the stocks long term.
