In my opinion, better to ask forgiveness than permission. I’m quitting myself on Feb 2nd, but will give my employer 3 weeks and have 3 PTO days I will be taking no matter what... if they call me out, I’ll say I’m sorry - but in my experience, once people are on their way out, they’re basically out and have a lot of leeway...
Lots of non answers here so let me add a real response: you should tell them you're going to stay on 10 working days, ie the full 2 weeks they expect. In your scenario that means your last day would be 2 days later than you originally planned. They probably will just shrug and let you make your true last day the Fri before that but the courtesy of giving enough time to transition the work matters.
If you live in an at-will state, you don’t need to give them 2 weeks - it’s a professional courtesy, but if you think they’ll give you shit for taking PTO, don’t let them know you’re leaving until after you take it...
They will frown upon it greatly and it won’t reflect well on your integrity. A full 2 weeks is bare minimum.
Just go, and don't put it in as vaca. Your project will probably roll you off anywyas
I live in an at-will state, it don’t want to burn any bridges at all - so definitely going to give a two week notice. I guess my main question is: what, if anything, would they say when I submit my two-weeks but also say I’ll be off these two days during my two-week notice period?
Op- the scenario you described doesn’t seem like any notice to me. Two weeks notice is to allow you to wind down what you’re doing and train your replacement

I took vacation during my 2 week notice and it was fine. I think the policy means you can’t say I’m leaving tomorrow but I have 2 weeks of vacation left so I’ll use that as my notice period. It’s terribly written and I had the same exact concern but was no problem at all, I even told the people consultant and they didn’t seem phased. Just make sure the vacation isn’t your last day and you should be good!
