If your role is being closed/being laid off (not due to performance issues) just firm downsizing, do you tell the companies you are interviewing? How to phrase it?

How do you get experience when no one will hire you? I wouldn’t mind hanging a shingle but I feel it’d be irresponsible to do so with no experience. Unlike all of my classmates, I never landed an internship/externship in law school - had only one interview. I was a PT law student, came from a CS background, and worked in IT throughout law school. I passed the bar exam on my first try (Oct 2020) and have only had a couple interviews out of the hundreds of applications I sent out. Any suggestions?

Landed an interview tomorrow with Zendesk. I’m so excited for this! The role is for a business development representative. I have around 8 YOE in sales/client services. Desperately want to get into healthcare strategy consulting. 13 years of healthcare clinical experience including project work. MBA. But keep getting told by recruiters that I don't have enough experience to be a Consultant or Manager but that I have too much experience to enter in every level such as a Senior Associate. Just one rejection after another, even when applying with internal referrals from Director or Partner levels. What am I doing wrong?

Currently making $118k with ~8-10k bonus every year at a small firm. Have an offer for a senior data viz engineer with KPMG lighthouse for $125k/5k signing bonus. Is this reasonable or should I go back and ask for more?
