If she’s really structured she will react badly to this. Your best bet is to schedule official ‘feedback time’ with her and make it clear in the invite that it will be two way (eg ‘Id like to discuss ways of working effectively, now that we’re a few months into the project’).
Then in the meeting be clear but kind. ‘I know you are very busy and organised, and so all discussions are booked in. However sometimes I feel like this can hamper my ability to reach out with a quick five minute question, or to share some new insight that I’ve gained. What’s the best way for us to engage in these ad hoc moments?’
I am also someone who books all my to-dos so my diary looks rammed. But I also make it clear to my team that they can approach me anytime to check in and if I am not totally slammed I will always respond. She may just need a prompt to get her to do the same thing.

sorry if the post doesn't make any sense, I just re read it so I'll try to clarify here.
My boss is great but she's super super organized and will try to schedule any type of conversation and plan what she's going to say. My teammates are too afraid to bring it up but I'm happy to raise it with her. As much as I want to schedule something on the calendar to talk about feedback (both ways), I want to talk impromptu and get an idea of how she handles it. Is that too much? If I were in her shoes, I wouldn't mind something to break my typical process but wanted to poll the bowl
