I had interviewed for an internship position at EY for technology consultant program for summer 2022 and got a call where they extended an offer. I wanted to know if I can defer the internship offer to fall 2022 or a later start date after summer.

It would depend on what the accommodation was and the reason.
I agree, more information is needed.
I give my opinions to the committee on the form that they provide. The parents get what they want 90+% of the time; meanwhile, the numbers of accommodations are increasing. One recent one allows “frequent” breaks and listening to music. This is a kid who is gone 10+ minutes when she asks to get a drink or go to the bathroom. I’m only letting her listen to music if it’s not direct instruction or group work. It’s an AP course and she has a 37%. 🙄 Why isn’t leveling down an option when the child says she can’t do the work or study?
In my district a 504 is issued for medical purposes -usually ADD, ADHD, asthma, diabetes. If the issue is intellectual deficit, the student has an IEP, but only after extensive testing is done and a notable numeric point discrepancy is present. Students then have an IEP created by the case manager that names the qualifying category, lists the hours and types of instructional settings (co-taught, self-contained, support facilitator, monitor consult), and accommodations to be given by the TEACHERS. Many students have an IEP for only one subject because their deficit is subject specific.
You should have received a copy of the student’s accommodations page(s). Read these carefully because they are legal and binding documents. If those accommodations were not given for your subject, you are not required to give any. Please note that 504s have accommodation pages as well, but because those students do not have a specific case manager (504 administrator), you’ll have to research to find out who that person is and hound them for the documents.
Just be aware that the parents will win most of the time, and you are required to show that you offered the approved accommodation.
Of course, there's vigorous compliance, and then there's minimal compliance. At some point, you have to find a path that is best for the kid AND fair to you.
