COBRA
Yes yes yes

For one week, personally I would white-knuckle it. I would do cobra for a month or more, but it’s terribly expensive.

Yes! I thought I remembered a retroactive option but then I convinced myself it was with my new insurance. If it’s available with cobra, that’s OP’s answer!
You have either 30-60 days to sign up for COBRA (forget which) and it’s retroactive from when you lost your coverage. So don’t get it unless you will be going to the doctor (or if something happens to you).
The 60 day period has been in the statute a long time (since the late 80s I think). There is an additional extension related to the pandemic.
The new firm may say that your coverage is retro to the first of the month.

Pretty sure Cobra can be retroactive. So risk it and if you have something go wrong, you can sign up. This is what I did.
You can also buy a month of insurance on the exchange. A change of employment is usually a “qualifying life event” so you can enroll outside of the open enrollment period. That’s what I did between jobs when I had a gap.

I can’t believe you guys don’t have free health care in the states. Whenever I think about it I think it’s crazy 😢

Yes very true, it’s got to almost breaking point atm. I just hate the idea of someone having to make a decision on whether they should get something checked/receive medical care or not.
It's a week? Don't boogie board during a thunderstorm into a bar and you should be ok! Who needs health insurance for a week?
