Presuming you’re a consultant who gets paid for your time, scope creep is actually to your benefit. Where to keep boundaries is adjusting the schedule and budget/invoice accordingly.
Software engineers are pretty good at this - “oh you want a button on the website that does X? That will be 8 hours of dev time and a week delay for testing and build”.
For fixed price deals and/or projects with an immovable deadline then yes, you have to keep boundaries for the sake of the project. You can deflect things to the project schedule and scope of work documents - this isn’t about you or your willingness to pull all nighters to fill the whims of change. You can still be accommodating to the client and flexible - so long as you get paid for the work.
