First of all try and relax going into the inspection walk, because the Health Inspection is hawk's eye view into safety.

Definitely listen to learn and do not take anything personal

Ask plenty of questions and take notes.
Answer all questions honestly

Fix whatever you can fix during the inspection walk

If you have work orders for appliances that are not operating properly, be sure to show the work orders

Be sure to coach any employees that are operating outside of standards.
