You can’t enroll in an HSA if you don’t have a high deductible plan.
OP, I was in the same position as you with an amazing health plan from my parents that I stayed on until 26. I recently had to switch off and now have been able to set up an HSA. It’s nice to have the tax advantage account but having all health expenses covered was amazing. Stay on your parent’s as long as you can!!
It should be really easy to set up when the time comes. If you select a high deductible plan you will likely be autoenrolled and your employer will contribute some on your behalf and will take payroll deductions for the rest. Benefit of going though your employer is money is taken out pre-FICA. If you contribute on your own, it’s pretax but not pre-FICA.

If you’re not on a high deductible plan, you’re ineligible.
I also think you’re ineligible to remain 24 forever, but you may want to double check that one.

You can set up an HSA with Fidelity and contribute the max. You may be missing out on some free money from your company though but depending on the amount the company contributes then it may not make sense for you to start paying for your insurance yourself to get their contribution.
