EY is more on the side of project management and process improvement in SaaS, as told. While there is hands-on in other two.
If I don't consider pay, which company is the best to go for considering work and culture(peope friendly).

Honest curious question: I always though recruitment was a form of selling, was I wrong?
It is definitely a form of selling! I should have been more specific. I would rather be selling a product or software to consumers instead of selling them a job opportunity. Very similar just different outcomes and different commissions

Create a ‘bridge’ so you can skip being an sdr and go straight to AE. Sell recruiting/HR software. Companies will appreciate you have a good background selling ‘people’ and understand the people you’re selling to very well and better than your typical SaaS sales rep - this will give you an edge as you’d be selling to people like you now and possibly be able to leverage some relationships you have.
Align your recruiting sales process/cycle to that of a SaaS sales rep. Prospecting, Discovery/qualification, solution selling, leading prezo/demos, negotiation, etc.
Not necessary but If you can demonstrate an understanding of the product you’d be selling (I.e. have used it or used something similar) and that would be the cherry on top.
I went from being an IT recruiter for a staffing company to a Sales Exec for a consulting firm. I found a decent amount of parallels in the jobs and it made for a quick transition.
