I have done this for a while and will give you some tips. Always plan ahead for your trip. Whether that be meal prepping for a short trip or just getting basics like protein bars, powder, and a carb source ahead of time. I’ve meal prepped for flights and drives all over its not hard and TSA will check your bag but it’s no worry for them.
Focus on protein consumption as it’s the most satiating. You can always get a salad anywhere with chicken or steak. I like to make sure I’m consuming beef or steak on trips so I can get animal based protein and fats in one go instead of relying on a separate protein source like chicken breast and fats source like olive oil that I’ll need to measure out. It’s the best bang for your bang hands down in terms of vitamins and minerals, bioavailability, and macronutrients. Almost all pubs and restaurants will serve you a piece of protein with a veggie. You just gotta ask for it. For instance I got two burger patty’s and green beans yesterday at a restaurant for $4 per patty. Depending on how many times you eat per day I’d recommend having protein bars or powder ready to go for those spots where you need to eat in a pinch.

Drink water, get plenty of sleep, pack protein bars. For food, maybe eat salads but also look for any taco joints, places that do sandwiches/wraps, or maybe seafood? If you have a mini fridge you can probably stock up on some Greek yogurt from the grocery store too

Are you working out? There’s lots of free videos on YouTube of short workouts you can do in your room that require no equipment. And if all else fails, walking is a great fat burner.
Focus on ordering protein and greens from restaurants - it doesn’t always have to be boring salads. I’ve had some very healthy meals at small town bbq restaurants ordering just chicken or whatever protein and collard greens, green beans, etc.
Once my only option was KFC so I ordered the meatiest chicken option, side of greens and removed the skin so I only ate the white meat.
I’m really sorry to hear that. Sounds like a tough time. Any way you can ask to come off the project that has you traveling so much?
I'm imagining like super bare bones access here so maybe more options for tools to cook decent things from a hotel room yourself? Like, if you have consistent access to a microwave and you can pack a bit heavier I would buy a small electric kettle from Walmart and bring it along with me along with a collapsible bowl/container and a camping fork/spork.
With a kettle and a microwave you can fix oatmeal, you can boil eggs in a kettle, you could make a noodle based meal (vermicelli rice noodles + microwave bag of veggies), soups. Or subscribe to a meal service like daily harvest and just pack them up to bring along with you.

Could you have a company like Freshly deliver meals to your hotel? They’re pre-packaged and just need a microwave!
Otherwise, I survive on protein bars, fruit, and grocery store finds when I’m out and about! Like someone above mentioned, most restaurants will give you a piece of chicken or steak and a side of veg - even if it’s not on the menu!
