Hi,
I'm currently having an offer from BlueOptima and Cohesity and am conflicted between the two.
I have offers in the SDET profile.
Cohesity Inc is providing me MTS and @BlueOptima is providing SDET-1.
Glassdoor reviews more of less place the two companies almost equally, and the package being offered by the two is almost in the same range.
My preferences include:
Learning opportunities in the role.
Company's work environment.
Company's growth prospects, are also a consideration.

I've only ever found role playing like that to have limited usefulness. It can be good as a rehearsal, to make sure I'm very familiar with the material. The back and forth is, as you indicate, generally not too useful. The best way to learn is in real situations, where you have to think on your feet.

I can’t stand role playing. It’s awkward and nothing like actual selling. At least the flow isn’t. It feels artificial and performative and I don’t like not being completely authentic.
That said, as much as it pains me to say this, it can be very beneficial. Most of us think we sound awesome and can’t be denied and have the answers to everything.
Truth is, we don’t. And there’s always someone better or who has a better answer or way of explaining a feature, etc.
So while I’d prefer to not do them, when I’m put in a situation where we role play, I push past that initial awkwardness and look forward to seeing where my weaknesses are and how to improve.
Sales come pretty naturally to me, but I’m not arrogant enough to not recognize when someone is doing it better than me.
